I am thinking about trying to use either a corn flour or a brown rice flour instead of wheat flours to make fetticine for my daughter in law who is gluten intolerent. Has any one tried this? would it work without the gluten?

I was wondering if you have tried this yet and how it turned out. I have been looking for some GF pasta recipes.

If you have the pasta rollers or the pasta press, you can surely try that, as they are made more for the exotic flours....

If, however, you have the older pasta plates for the Food Grinder Attachment, I wouldn't recommend that, as it's not designed for that sort of task.....

I haven't tried this as of yet... I do have the rollers to try it with. Waiting until my daughter in law who is gluten intolerant is out of school for the summer so we can get together and give it a try...would love to know if it works for someone else tho...

I just made some pasta for my wife using Soy Flour. I used 2 cups Soy flour, 3 eggs, dash of salt. and and a teaspoon of evoo. mix till it comes together put in Frg. for 30mins. and use the pasta roller and the cutter of your choice.

I think you'll like having the rollers, because you can do so much more with them than you could do with the pasta plates...

Get the Pasta Press, though. I think you'll like having more choices of pasta you can make with the exotic flours. You just can't do that with the pasta plates. The Pasta Press is rather expensive, but worth it...

This may be a question for our KitchenAid folks but where can I get the pasta press Vernon is referring to, in Canada? I have not found that model number for sale here.

Hi Amcoro-- the KPEXTA pasta press was just introduced last year, and at first it was exclusive to purchase only at Williams Sonoma stores (not sure if y'all have those in Canada), but the exclusivity was just released as of July 1, 2010, so the KPEXTA should be available at other local retailers shortly. Depending on when your local stores ordered it, or if they chose to carry it, inventory may be limited or still pending. I would suggest to call around at some stores in your area that normally carry KitchenAid. If they don't have it yet, they may be getting some soon.

Thanks Quinn!!! We do have a handful of WS across the country at the moment (mostly in Toronto) but if the exclusivity has just been lifted I will just wait and see...might be able to get a good introductory price somewhere
