I know this post is veeeeeeeeeeeeerrrrrrrrrrrry old, and I apologize for not answering sooner...  
I would try the KA instruction booklet that came with your attachment, (depending on the attachment, you can or can't do pastas other than egg all purpose recipes.) If you can do the "artisan" recipes, I would feel free to test out your attachment as far as different flours and water/egg combinations go. Maybe go with a semolina pasta, or maybe a whole wheat or rye pasta. I would think you could make good rice noodles with your attachment as well. (I have the Pasta Press and I really enjoy it very much!!  )
Just "play with your food," so to speak, and experiment with the new toy you have. What's to lose but a little flour and other ingredients. If you don't experiment, you'll never know the true limits of your talent. THE SKY'S THE LIMIT!!!!!!
